Good Recipes for a Special Occasion?

My boyfriend and I are coming up on our 1 year anniversary this Sunday and I wanted to cook a special dinner for him. I was wanting to do something with atlantic Salmon or rib-eye/rib roast but don't know any good recipes. I was also hoping if anyone knew a great recipes for macaroni and cheese from scratch I would really appreciate the info. So please toss your recipes and suggestions my way. Thanks in advance!
